Strawberry Cheesecake Waffle Recipe

My Blueberry Cheesecake Waffles recipe has been seen by over 30,000 people in under a year. It is a delicious recipe and I as well as anyone who tries it, love it. Lately, I wanted to make the blueberry cheesecake waffles but didn’t have blueberries or fresh lemons. Instead, I made these Strawberry Cheesecake Waffles, they turned out absolutely delicious!

The strawberries are deliciously sweet, the lemon juice adds a tiny bit of tartness, the cream cheese smooths out the dish with its creaminess and the waffle adds heartiness to every bite. I doubled my original waffle batch recipe for this (as we had company over) and it turned out suburb!

Serves 6-7

Ingredients:

3 Cups Pancake mix (Start with 2 1/2 and add until you get the desired consistency).

1 1/2 Cup Water

2/3 Cup Vegetable Oil

4 Eggs

1 Can sweetened and condensed milk Eagle brand! (very important) I tried a store brand and it was too runny. If you only have a store brand you will need to add about 3-4oz of cream cheese to get the right consistency.

1- 8 oz package cream cheese

Juice of two large lemons or 2 1/2 Tablespoons

1 16 oz container of sliced frozen fresh strawberries with sugar (defrosted). You may want to have two containers or a larger container on hand in case you want a lot of strawberry topping.

Pam/cooking spray

Waffle Iron- I love this kind

Directions:

1. Start waffle iron

2. Blend the pancake mix, water, eggs, and oil in the blender on a low mix setting for about 30 seconds or until just mixed. Do not over mix. Add more pancake mix if the mixture is too runny. It should be the consistency of drinkable yogurt. Once the iron is preheated, pour the mixture in (spraying with Pam first).

By the way, if you are on the market for a new blender, definitely check out Blendtec, I just got one and LOVE it!

3. While the waffles are cooking heat the unwrapped cream cheese for 30 seconds in the microwave, juice the lemon, and open the sweetened condensed milk. Mix all 3 ingredients together in a medium sized bowl with a hand mixer or like.

4. When the waffles are done, top with cheesecake topping and add strawberries with strawberry juice (that is in the container) on top.

For those who like rich and sweet add more topping, for those who do not like rich things spread both toppings very thin.

Enjoy!

Wonder how cherries would be, even maybe a few dabs of Cherry Pie filling, if you can find the pie filling that has cherries in it anymore. The last can I got only had a few cherries in it. LOL

I bet Cherries would taste great- as long as they are somewhat sweet (not too tart). Maybe try fresh cherries mixed with cherry-less ‘cherry pie filling’ 🙂

    Hi,
These sound delicious, I intend to try them soon. But the reason I’m leaving this comment is to tell you that your link to the type of waffle iron you like, actually goes to an anti snoring device.lol
