This Twix no-bake cookie recipe is super simple, quick, requires only three ingredients, and is delicious! I’m so excited to make them with family and I want to thank Becky for sharing it here on the blog today. Welcome Becky!
Hi Live Like You Are Rich readers! Becky here, from Bite of Delight, the place where I keep my recipe collection of old favorites, new favorites, and all my kitchen adventures! I’ve got a little bit of everything because it’s everyday, real life recipes that we actually eat and love! I am thrilled to be here today to share one of our new favorites, these Twix Cookies! It takes two of my favorite things (buttery crackers and Rolos) and covers them in chocolate. What’s not to love?!

All you need are some ritz crackers, rolos and chocolate chips. That’s right, only three ingredients! These cookies just keep getting better and better!

Just place the crackers on a baking sheet (salty side down), and place a rolo in the center of each cracker. Put baking sheet in a hot oven for a minute or two, take out. Press another cracker down on top and they are now ready for dipping. {The chocolate had a tendency to poke up through the middle hole, so I just covered it with my finger as I pressed the cracker down. Problem solved!}
That’s it! The recipe is so simple that kids can easily help!


Twix Cookie Recipe
Ingredients:
- 40 Ritz crackers
- 20 Rolos, unwrapped
- 1 1/2 cups chocolate chips
Directions:
- Preheat oven to 350 degrees.
- Place crackers, salty side down, on a baking sheet.
- Place a Rolo in the center of each cracker and place in the preheated oven for about 1.5 minutes, or until the chocolate is glossy.
- Press another cracker, salty side up this time, over the top of the Rolo until the chocolate meets the edge of the crackers. Repeat with all crackers and let cool.
- Melt the chocolate chips (I did a combo of mostly milk chocolate with some semi-sweet, use your favorite). Drop a Rolo cracker in the chocolate and cover completely. Using a fork, lift it out of the chocolate and tap to remove excess chocolate. Repeat until all crackers are covered in chocolate. If you coat your cookies thicker than I do with the chocolate, you may need a little more.
- I left mine beautifully brown, but you can easily dress these cookies up for any theme…drizzle with white chocolate, dust with edible glitter, or drop some sprinkles on top. Whatever your imagination can come up with!
