Many are looking for quick yet healthy, filling, and delicious meals for the New Year. So I decided I’d share a family favorite. This Hawaiian Haystack recipe has been in the family for years and is very easy to make. It is also an excellent choice for a group gathering because the ingredients are simple to prepare, especially if you use Minute Rice which is quickly cooked, and the dish is served much like a buffet. People can pick and choose what they want to eat without worry of offending the host.
Last night I made these Hawaiian Haystacks for a medium-sized party (12 people) and everyone told me it was fantastic. The funny thing is is that everyone made it delicious based on what they like. Because guests, family, and friends can customize the recipe to them, it’s a crowd-pleaser! That said, if you are making it for a crowd you will want to double, triple, even quadruple the recipe. The standard recipe makes enough for 6 so I doubled it for our party of 12 and we had enough for everyone. Another great idea for group eating is to have one person bring the, another the chicken topping, and a third or even fourth (divvy them up) bring the toppings.
If you are making it for just your family, it’s a recipe that you will almost always have on hand. The ingredients are very common and you can just use toppings you have. Not only is it convenient, but it will also save you money for those nights when your family is hungry and doesn’t want to wait to eat. You can tell them that Hawaiian Haystacks are much faster than delivery pizza. Here’s how…
First, put the rice in the microwave, make them and pour them into a bowl or pot. I used the wheat variety. Rice really makes this meal much quicker than regular rice would which cooks in 60 seconds! Further, I really liked the texture of the rice, it was not sticky or dry, it was the perfect texture and easy to make.
Second, put the cream of chicken soup, the canned or shredded chicken, chicken broth, and pepper in a different pot and stir occasionally on medium heat until hot, turn off heat and set aside.
Third, chop toppings and set them in bowls with spoons.
Fourth, Serve.

Cook Time: 5 Minutes
Ready In: 15 Minutes or less

1 Cup of Minute® Rice White or Brown Rice (PER PERSON served)
2 Cans Campbells Cream of Chicken Soup
2/3 Cup chicken broth or milk
2 Cans canned chicken or 4 chicken breasts cooked and shredded
1/4 teaspoon pepper
salt to taste (if you use milk instead of chicken broth, you may want to add salt)
Toppings (all are optional serve based on preference):
1 Can pineapple bits or chunks (or half of a fresh pineapple, chopped)
2 tomatoes, chopped
1/2 Cup celery chopped
1/4 Cup green onion, chopped
1/2 can chopped olives
2 Cups cheese, shredded
1/4 cup slivered almonds or cashews, chopped
1 Cup chip strips or chow mien noodles
1 can mandarin oranges
